Bolivia - Organic 2011/12 - Roasted

A couple months ago I had a beautiful, tiny wild Criollo from Bolivia.  It sold out very fast.  This is a different bean.  It's more traditional in pretty much all aspects.  It's traditionally grown, is of average size (95-100 g/100 beans). 
 
This particular cocoa has a nice mild but definite chocolate flavor.  There is black pepper in the nose.  The black pepper backs off in the flavor, although it is still present, and you then have layers of toffee, soft, delicate fruits, a certain savory butteriness and a great chocolate backbone lacing it together all throughout.
 
As with many beans with Criollo stock, this cocoa will not blow you away with huge flavors.  But very much like it's wild counterpart it is  sure to wow you with it's character.  To repeat myself (from the Wild Bolivian), this cocoa and the chocolate that can be made from it just makes me happy.

I have found this bean accepts a pretty wide roasting curve. Light, medium or heavy, the flavor changes, but just does not go bad.  In general though, keep your standard roasting profile just a little (25 F?) cooler since these are so much smaller than your classic bean.  When roasting, the have a beautiful browned butter aroma that I am coming to associate with purer clean strains of Criollo.
