Chocolate making kit of the Month Club

Sometimes life gets in the way of the things that bring us joy.  Like making chocolate

Which bean to pick? How to roast it? Which recipe?

Oh, and the time!  But you would do it if it was ready to go.  I've said this myself.

So this is my offer to bring you joy.

It is a ready-made kit that you just toss in the Melanger and the next day you have chocolate.  And it has an option that you can have a different chocolate show up every month for ongoing joy.

This kit includes all the materials you need for making a batch of chocolate, already portioned out.  You won't need to roast, winnow or even weigh anything.

Each month there will be a different selection featuring my current favorite cocoa bean, roasted and winnowed into nibs, and all set to use in a different recipe.  Included will be the detailed roasting profile so you have it for reference and of course basic instructions.

Currently the schedule is:

  • 75% Tanzania Organic Dark Chocolate (April 2017) (past)
  • 66% semi sweet Bolivia (May 2017) (past)
  • 83% Dark chocolate  - Honduras (June 2017) (past)
  • 54% Dark Milk chocolate Madagascar (July 2017) (past)
  • 90-100% Fiji (August 2017)
  • Vietnam Lam Dong (September 2017)

In each case you will get the roasted cocoa nibs and sugar needed, plus any of the special/optional ingredients like cocoa butter, milk powder, and vanilla beans as appropriate to the recipe.  I'm not planning to have any soy lecithin in any of these.

Mostly these will be non-milk chocolate, but there may be one here or there. 

As a perk, new beans in stock will most likely be featured the month they arrive.

Just like all the hip new food in a box delivered to your door programs assume you have basic cooking equipment and utensils, I too assume you have a Melanger like the Spectra 11 or similar, and a basic home oven.

You have a choice of 2.5 lbs or 7 lbs batches.  I've picked these sizes to efficiently fill USPS flat rate boxes.

**Subscription Details

This is the way it works. . . You will sign up to be a part of the Club with a purchase of this month’s selection, making sure to click the Subscription box. You only have to do this once! Your order will queue up to ship out.  Then on the 21th of the next month, and any subsequent months, you will receive that “Chocolate making kit of the Month” automatically. We will have one Kit to offer each month at a flat rate. 

We intend to announce the chocolate at least a week in advance on this page, ideally two weeks in advance (we will see how that works out and adjust accordingly).  You will be able to skip a purchase if you want, or cancel at any time. I only want you making chocolate if you are wanting to make chocolate!

The date of execution, when your credit card is charged, for the Club membership will be the 21th of each month.
